My name is Tom, and I was born and raised in Yunnan, China. The flavors of my hometown are more than just food-they are memories, traditions, and a way of bringing people together. When I moved to the U.S., I longed for the comforting taste of Yunnan cuisine, especially the beloved Cross-the-Bridge Noodles. In 2019, I opened Nan Noodles in Bellevue, WA, to share this experience with you.

THE MEANING BEHIND NAN NOODLES

Our restaurant was originally named PAVO, which means "peacock"-a symbol of beauty, luck, and hospitality in Chinese culture. Like the vibrant peacock feathers, Yunnan's food culture is rich and diverse. Today, as Nan Noodles, we continue that tradition, offering authentic flavors that bring warmth and joy to every guest.

What Makes Us Special

At Nan Noodles, we serve dishes made with fresh, locally sourced ingredients, just like back home. Our specialty, Cross-the-Bridge Noodles, comes with a steaming bowl of rich broth and an array of fresh ingredients-quail eggs, chicken, squid, fish, and crisp vegetables-creating a meal that's both interactive and delicious. Every dish reflects the flavors of Yunnan, prepared with care and tradition.
